m&m hide and seek

So, here is the thing. I have a major weakness. It is called sugar. I love the stuff. I love cookies and candy and ice cream...you name it, I like it unless it has coconut. yuck!

As you can imagine, Christmas time is a rough time for us sugar lovers, I made it through though. However the other night I was sitting on the couch...probably on pinterest. And I was absolutely mindlessly eating peanut butter m&m's (these things are the best! but the worst for my waistline because I think they are the best). Anyway, I, no lie told my husband to hide them from me in our apartment and only ration them out to me every once and a while. haha! how pathetic is that?! Hopefully I am not the only crazy one out there who needs candy hidden from them ;)

On that note, I will leave you with this recipe for baked zucchini chips! I got the recipe here


1/4 cup Breadcrumbs
1/4 cup grated Parmesan cheese
1/8 tsp black pepper
heaping 1/2 cup whole wheat flour (I used regular flour)
1 cup cold milk
1 tsp apple cider vinegar
2 1/2 cups sliced zucchini (about 2 small zucchinis)

you will need to preheat your oven to 425
then mix the breadcrumbs, pepper and parmesan together in one bowl and all other ingredients into another. Take the slices of zucchini and dip them into the flour mixture then coat them with the crumb mixture and place them on a baking sheet. Then bake them in the oven for 15 minutes, flip them over and bake for 15 more minutes.

I will say that on their own they were not all that impressive but they have potential with some tweaks here and there. I would suggest maybe some garlic salt or more of some other seasoning you like because they were just a bit too bland. So, I dipped them in ranch therefore negating any healthy-ness that the zucchini chips once had (oops). I also did not make my own bread crumbs...I just didn't have the time to so I just used garlic and herb ones that were store bought.
